Should I tell my mentor that I can tell she uses AI for her papers and her feedback on my work?

I'm a new postdoc to this lab and still getting to know the team, and I like my mentor. But I've noticed that my mentor doesn't actually write any papers on her own, and not even the feedback she gives me on my papers. Everything is AI. And I'm pretty confident about this because there are times when she would respond to my email (assuming it's without AI) and it sounds very disorganized with tons of grammatical errors, compared to when she's giving me feedback (very structured, bullet points even, no typos or grammar mistakes). To be fair, her feedback does make my work read better, but then I think about how I could just use AI to get that feedback then, like what's the point of my mentor being there? She even keeps all the em dashes in everything, which I'm positive she doesn't actually use in her own writing. The same "tone" in how she provides me feedback both in email and through my written work, is the same tone I see throughout her papers. I've also heard from some of the grad students in her lab who have worked with her longer that they also suspect that our mentor heavily relies on AI for all the heavy writing parts of her job.

My mentor has never openly talked about her using AI for her own writing or when providing feedback, but she does quickly suggest AI for a lot of other things ("ask AI to summarize that for you" or "ask AI to create the figure"). I try not to rely on AI so much because I don't want to lose my own research skills, but it's hard when my mentor suggests AI as the answer to pretty much all my questions/problems, without offering concrete suggestions that can help me grow and learn as a postdoc.

I'm also concerned because many journals are requesting AI use disclosure, but I know my mentor hasn't done that, and I feel like I have to confront her about it to discuss whether I need to disclose AI use (even if it's not my own use) because I'm pretty sure my mentor provides her feedback using AI. I also feel frustrated that she's giving me AI feedback and perhaps not reading my work all the way through. Is this something worth discussing with her and sharing my concerns? Or should I just keep my head down and not bother with it? How would others handle this?
