Low input high reward recipe suggestions?
I’m looking for:
- Weeknight dinners that you’d pay $30ish for at a nice restaurant but come together with little effort, decently fast (the active parts, at least), and on a budget.
- Sides, snacks, lunches that prep well (like a fresh loaf of “rustic” - aka kneadless and simple - bread or cheddar bay biscuits)
Some examples of the former are Chicken au Poivre - a one pan classic with next to no active involvement - and a pasta with only tinned salmon, cream, and lemon as the necessary ingredients.
I can’t comfortably stand in one place for extended periods (POTS etc) and my university is in “finals month” so I can’t justify spending an entire evening over a stovetop, but proper nutrition (particularly high calories, I urgently need to gain weight) is pretty vital to my wellbeing. Any suggestions for properly good but realistic home cooked dishes would be excellent. Long cook times are fine in theory, but minimal cleanup is essential. Thanks!
