I sliced a bunch of stuff in my mandolin and put it in a salad. Red onions, red peppers, green apple, some roasted chickpeas, feta cheese, and balsamic glaze on a bed of arugula. I didn’t think it’d be so tasty!

I’ve never made an upside down cake, or baked with plums, or used olive oil as opposed to butter. This cake did not disappoint at all! I’ve never had a cake rise so perfectly (even though I freehanded my risers). Delicious brown sugar notes, a little tangy from the oil & yogurt. Incredible job I must say!

Made a quick lunch after a hike today! Shrimp tacos with a cabbage lime slaw, mango salsa, side of chipotle salsa, side of black beans. Licked my plate clean.
