I’ve started a project where I want to grow a crystal for each of the five basic tastes. Four out of five are easy, salty, sweet, sour, and umami, but I’m really struggling with bitter.

Does anyone happen to know of a salt (or another compound s) that can be grown into a decently sized crystal and is extremely bitter? Epsom salt isn’t nearly bitter enough for what I had in mind. ^^
