About half way done baking this loaf but there is no ear. :( Is this a scoring problem? When I'm scoring the skin is hard to just swipe nicely across and it sorta starts doing a puddle impression immediately. Does that mean the problem is something to do with the skin? Help please?? I just switched from baking in a loaf pan to an open bake and haven't had an ear since.

Recipe included last pic

Autolyse 40 minutes

Add levain and fold

Wait 20 minutes fold in salt

Three more folds

BF total time 5 hrs

Cold retard 12hrs

Preheat oven 500°F with steam bath

Score bread slide onto plate

Drop temp to 450°F

Bake 20 minutes

Take bath out, drop temp to 430°F

Bake 10 minutes

Final temp 208°F
