8y/o Aussie More Questions Than Answers

We have an 8 year old mini Aussie who has been hospitalized since Wednesday afternoon 5/6. Our vet is amazing and doing everything he can but we still don’t really have answers as to why he’s not showing much change and is still not interested in eating.
On March 11 he started having gastrointestinal issues. He was just throwing up and couldn’t keep any food down. Still eating/drinking water and having normal bowel movements. He was showing no signs of being in pain or acting off at all. Our original vet did bloodwork, and a urine & fecal sample and sent us home with omeprazole. He started having diarrhea and having accidents in the house as soon as he started taking the meds. The tests came back fine the next day and the vet gave us a probiotic and antibiotic.
The following Tuesday he started not being interested in eating. Still throwing up and having diarrhea but otherwise acting normal. He was diagnosed with pancreatitis and given a shot of cerenia. They gave us famotidine and maropitant citrate to take at home.
He was still not wanting to eat and having the same symptoms so we ended up going to a new vet and since then it’s been a blur. He’s been in and out of the vets office over the last 2 months. The vet thinks he may have addisons disease which is causing the pancreatitis so he put him on Prednisone and he actually started going back to normal, he was eating small meals throughout the day, had no more diarrhea or vomiting and was getting his spunk back. After about a week and a half, he stopped eating again and having diarrhea. Still not vomiting but he was losing weight. We took him back in and he got a couple injections, I believe one was for nausea and an antibiotic. He ended up staying at the vet the following Monday to get fluids and so they could monitor him. He got an appetite stimulant and ate decently that night. The next 2 days he wasn’t eating again and ended up going back to the vet to get fluids and so they could try and figure out what’s going on. He’s been there since last Wednesday. On Friday he got a blood transfusion because he became anemic from not eating.
All bloodwork since then has been fine, his protein and calcium levels are low but that makes sense since he’s not eating that much. He’s still on fluids with vitamins and they have been syringe feeding him and said that his mood and strength has improved some but not as much as they hoped. Our vet is amazing and has been doing everything he can but we’re still just not sure what’s causing him to not want to eat.
Please let me know if there is anything we’re missing and any advice is appreciated.
*Edited to add we have also done scans and he has no blockage
