I need HELP with beef only lion diet.

I'm on day 16. about 5 days ago I had strong nausea and diarrhea trying to graduate to 73/27 ground beef (including rendered fat. Up till this point even tho I lost my liking for the food I could tolerate it), after this I developed a psychological aversion to eating this stuff, I've been subsisting on roasts since then and now I'm scared of building an aversion to roasts as well. I just tried 80/20 today and even that put me off from the first bite. I'm wondering how screwed I am?

I have leaky gut, I realized I can't pressure cook roasts as the glatamate extracted into the broth + my leaky gut was resulting in spiked stress hormones, heart rate, weakness in latter half of the day.

Any magic tips for surviving or thriving in this diet are welcome. I'm not going regular carnivore till after I restore my health. Even as shitty as these circumstances are I'd rather die than go back to the symptoms normal diet had caused me.

My gut is fucked and I have horrible full body inflammatory reactions and go mildly retarded in response to eating most foods. So I'm going carnivore. I have histamine issues with eggs and dairy, and beef seems the safest so why not. I just pan fried 80/20 dumped all the fat and beef in a bowl and ....it was kind of incredible, I didn't expect drinking beef fat to be so damn delicious lol. With that said it started to get a little gross 60% of the way thru it with just slight stomach upset. Overall, with no seasoning except salt, this is 100x better than chicken any day of the week, even better than most seasoned/sauced foods! So I'm happy. So now I'm wondering if 73/27 or 80/20 is ideal for my needs? I'm also going to occasionally pressure cook beef neck bones for broth, I'm open to supplement suggestions. I also imagine I need to quit coffee which is fine.
